Gnocchi began his legal career at a Rockville law firm before serving as an Assistant State's Attorney in the Baltimore City State's Attorney's Office, where he prosecuted a broad range of cases. In 2004, he shifted to criminal defense, joining a boutique firm and later founding the Law Office of Paolo Gnocchi, LLC in 2009. As a solo practitioner, he represented clients in Maryland and the District of Columbia, trying and winning hundreds of cases from traffic offenses to rape and first-degree murder.

A magna cum laude graduate of Universidad del Sagrado Corazón in San Juan, Gnocchi earned his Juris Doctor from the Catholic University Columbus School of Law. He was appointed Chancellor of the Jessup Cup International Moot Court Team and interned with the U.S. Department of Justice and a criminal-immigration defense firm.
